- 3 egg whites
- ½ cup sugar
- 3 cups ground almonds
- ⅔ cup semi-sweet chocolate (60% cocoa, finely chopped)
- 2 tsps instant Coffee
- ⅓ cup flour
- 60 Rice paper (4 cm | 1.75 inch)
- 1 cup good quality white chocolate (chopped)
- 2 Tbsps Crème fraiche
- To Garnish
- 60 Chocolate -overed espresso beans

Preparation steps
1.
Heat the oven to 160C fan assisted / 180C conventional / 350F / gas mark 4.
2.
Beat the egg whites in a large bowl with the sugar until they form stiff peaks.
3.
Mix together the almonds, chocolate, coffee and flour and fold into the egg whites.

Spoon the mixture into a piping bag with a smooth nozzle. Place the rice paper circles onto a cookie sheet and pipe a little macaroon on top of each.
5.
Bake the macaroons for 20-25 minutes until golden brown and let cool.
6.
Melt the white chocolate and crème fraiche over simmering water, let cool a little and then place a dab on each macaroon. Top each dab with a mocha bean and leave to set.
