Cod with Sauerkraut
Rinse fish, pat dry and cut into long fillets. Remove bones. Drizzle fish with lemon juice and season with salt. Peel, halve and thinly slice onions. Sauté onions in clarified butter, then transfer to a greased baking dish.
Spread sauerkraut on onions and season with salt, pepper and juniper berries. Place fish on sauerkraut and drizzle with creme fraiche. Cover with aluminum foil and bake in a preheated oven at 180°C (approximately 350°F), about 15 minutes. Remove foil and bake 10 minutes more. Before serving, sprinkle with chopped parsley.
