- 18 ozs Linguine
- 1 shallot (finely diced)
- 2 Tbsps olive oil
- 1 unwaxed lemon (zest and juice)
- ⅔ cup vegetable stock
- 3 cups venus clam (thoroughly washed, discarding any that are open)
- 3 Tbsps freshly chopped parsley
- 1 dried chili pepper (crushed)

Preparation steps
1.
Cook the pasta in boiling salted water until al dente.

Fry the shallot in a pan in hot oil until translucent. Add the lemon zest, 2-3 tbsp of juice and the stock and simmer for a few minutes. Season with salt and ground black pepper, add the clams, cover and steam for around 5 minutes. Discard any clams that have not opened.
3.
Stir in the drained pasta and check the seasoning. Divide between bowls and serve garnished with parsley and crushed chillies.
