- 5 ozs Dark chocolate (70% cocoa solids)
- ½ cup butter
- ½ cup milk
- ⅓ cup light brown sugar
- 2 eggs (beaten)
- 1 ⅓ cups all-purpose flour
- ⅓ cup cocoa powder
- 1 ½ tsps Baking powder
- 1 tsp ground ginger
- ½ tsp baking soda
- 1 large Pear (peeled, cored, finely chopped)
- ¾ cup chopped Walnut
- 6 Cherries

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 6 muffin tins with non-stick baking paper or paper cases.
2.
Melt the chocolate and butter in a large heatproof bowl over a pan of simmering (not boiling) water. Cool slightly.
3.
Beat in the milk, sugar and eggs until smooth.
4.
Sift in the flour, cocoa, ginger, baking powder and bicarbonate of soda until just combined. Gently fold in the pear and walnuts.
5.
Spoon into the paper cases and bake for 20-30 minutes until firm and risen. Cool in the tin for 10 minutes then place on a wire rack to cool completely.
6.
Place a cherry on top of each muffin.
