Chocolate Macadamia Cookies
- 4 ozs Dark chocolate (70% cocoa solids)
- 1 ½ Tbsps unsalted butter
- ½ cup all-purpose flour
- 1 pinch Baking powder
- 1 pinch salt
- ½ cup sugar (scant)
- ½ tsp vanilla extract
- 2 eggs
- ¾ cup chopped Macadamia Nuts

Heat the oven to 160°C (140° fan) 325°F gas 3. Line 2 large baking trays with non-stick baking paper.
Melt the chocolate and butter in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and cool slightly.
Sift together the flour, baking powder and salt. Set aside.
Whisk the sugar and vanilla into the chocolate. Add the eggs, one at a time, whisking until each egg is incorporated before adding the next.
Stir the chocolate mixture into the dry ingredients all at once until just incorporated. Stir in the nuts.
Drop rounded tablespoonfuls, apart, onto the baking trays. Bake for 10-12 minutes. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
