- 3 egg whites
- 1 cup powdered sugar
- 1 cup marzipan paste
- 1 ⅛ cups Shredded coconut
- 4 tsps Rum
- To decorate
- ⅔ cup bittersweet Chocolate couverture (chopped)
Preparation steps

Heat the oven to 180C (160C) 375F, gas 5.

Beat the egg whites with a pinch of salt until stiff. Stir in half the confectioners' sugar and the marzipan paste. Then add the remaining confectioners's sugar, shredded coconut and rum and mix to form a stiff dough.

Using two spoons, place heaps of dough on a cookie sheet lined with baking paper. Bake for 20-25 minutes until golden brown.

Take the macaroons out of the oven and let cool. Melt the chocolate in a bowl set over a pan of hot water. Decorate the macaroons with stripes of melted chocolate. Place macaroons on baking parchment and let cool completely.
