- For the biscuits
- 1 ¾ cups all-purpose flour
- 1 cup hazelnut flour
- 2 Tbsps instant Espresso powder
- 2 egg yolks
- ¾ cup powdered sugar
- 1 Tbsp Vanilla sugar
- ¾ cup cold butter
- all-purpose flour (for the work surface)
- To glaze
- 3 ½ ozs plain Chocolate (for cooking)

Preparation steps
1.
Mix together all the biscuit ingredients and a pinch of salt, and quickly knead to form a smooth dough. Shape into a ball, wrap in cling film and rest in the refrigerator for around 1 hour.

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with grease-proof paper.
3.
On a floured surface, roll the dough into sausages approx. 1 cm wide and 5 cm long. Place on the baking tray and bake on the middle shelf of the oven for around 12 minutes until pale golden. Remove from the oven and leave to cool.
4.
Melt the chocolate in a bain-marie over hot, but not boiling, water. Dip the ends of the biscuits in the chocolate and leave to dry on grease-proof paper.
