- For the meat
- 4 cups Beef (rump steak, thick flank, or fillet, tendons removed, cut into thin strips)
- 2 Tbsps dark soy sauce
- 1 egg
- 1 centiliter sherry
- 1 tsp Corn starch
- Plus
- 3 Tbsps clarified butter
- 4 cups fresh shiitake mushrooms (sliced)
- 2 cups Runner bean (sliced if necessary)
- 1 bunch scallions (cut into rings)
- 3 red peppers (cut into thin strips)
- 1 cup Meat stock
- ⅜ cup dry Red wine
Preparation steps

Mix together the soy sauce, egg, sherry and cornflour and marinate the meat in it for at least 30 minutes in the fridge.

Heat the oven to its lowest temperature.

Heat the clarified butter in a large pan. Pat the meat dry and fry on a high heat. Remove the meat from the pan, wrap in tin foil and leave to steep in the oven.

Fry the vegetables in the meat juices and deglaze with the stock and the wine. Braise on a medium heat for 5-7 minutes and season with salt and ground black pepper.

Remove the meat from the oven and add to the vegetables. Arrange in deep plates and serve hot. Goes well with baked potatoes or fresh baguette.
