Preparation steps

Drain the apricots in a sieve and cut into wedges. Remove the mint leaves from the stems. With a vegetable peeler, remove the lemon and orange peel in a spiral strip. Squeeze the juice, discard the pulp. Place the apricots, mint, lemon and orange peel and the juice in a bowl. Add the white wine and refrigerate until well chilled, 1-2 hours.

When ready to serve, add the mineral water.
