Chicken with Vegetables
Rinse the chicken, pat dry and divide into 8 pieces. Peel and finely chop the garlic. Mix the garlic, ginger, honey and 5 tablespoons of the soy sauce. Place the chicken pieces into the marinade and mix well. Marinate for about 30 minutes.
Rinse the scallions and cut into 2 cm long pieces. Rinse, halve and roughly chop the peppers. Cut the pineapple into small pieces. Rinse the chile and cut into strips. Saute the scallions, peppers and chiles in hot oil. Remove the pan from the heat, remove the vegetables and place the chicken in the pan. Pour in the marinade and the broth. Simmer for about 20 minutes. Mix the starch with a little bit of water and slowly thicken the sauce with it. Add the vegetables and pineapple. Let simmer for about 5 minutes. Season with soy sauce.
Serve garnished with cilantro.
