- 1 Orange
- 5 sprigs thyme
- 8 Coriander
- 5 pink peppercorns
- 3 white peppercorns
- 5 Tbsps olive oil

Preparation steps

Rinse the orange in hot water and pat dry. Finely grate the zest and squeeze the juice. Rinse and dry the thyme, then remove the leaves. Crush the spices in a mortar and mix with the thyme, orange zest, and olive oil to make a marinade.

Rinse the chicken and pat dry. Brush with the marinade, and let marinate for 2 hours.

Cook the chicken on the grill 10 minutes, until golden brown, turning occasionally.
