- 1 chicken (approximately 2.5 pounds)
- freshly ground peppers
- Pastry flour
- 4 Tomatoes
- 2 shallots
- 150 grams black Olives (pitted)
- 4 Tbsps olive oil
- 5 fresh Sage
- 250 milliliters white wine
- 3 tsps Tomato paste
- 2 Tbsps lemon juice
- 1 lemon (peel)
Preparation steps

Rinse the chicken, pat dry, and cut into 8 pieces. Rub with pepper and sprinkle with flour. Blanch the tomatoes, remove skin, and cut into eighths. Peel the shallots and garlic. Finely chop shallots. Cut olives in quarters. Heat oil in a roasting pan, brown chicken pieces in batches with the sage leaves.

Remove chicken pieces and sauté the shallots and garlic in drippings for 5 minutes. Deglaze the pan with the wine. Add tomato paste and cook briefly. Return the chicken pieces to the pan and simmer, covered, over low heat. After 15 minutes, add the olives and tomatoes and cook another 15 minutes. Season with pepper, salt, and lemon juice. Garnish with fine strips of lemon peel.
