- 1 carrot
- 1 pc Celery (approximately 50 grams or 1 3/4 ounces)
- 1 garlic clove
- 2 yellow onion
- 1 chicken (ready to cook)
- salt
- peppers
- 500 grams mixed Wild mushroom
- 1 Tbsp clarified butter
- 1 rosemary
- 2 thyme
- 1 bay leaf
- ¼ l dry white wine
- 250 milliliters chicken stock
- chopped parsley (to sprinkle)

Preparation steps
1.
Peel carrots, celery and garlic and finely chop. Peel onions and cut into narrow columns. Rinse chicken, pat dry, cut into 8 pieces and season with salt and pepper. Preheat oven to 200°C (approximately 400°F).

Rinse mushrooms and cut into slices. Brown chicken pieces in hot butter in a roasting pan on all sides. Add vegetables, garlic and onion.

Add herbs and mushrooms and pour in wine and chicken stock. Season with salt and pepper and place roasting pan in oven on middle rack. Cook for about 45 minutes. Sprinkle with parsley before serving.
