- 2 Chicken breasts
- salt

- 2 Tbsps clarified butter
- 1 can Corn
- 1 carrot
- 1 small Zucchini
- 1 small, red onion
- 1 garlic clove
- 1 Tbsp Vinegar
- 4 Tortillas
- 4 Tbsps cream cheese
- For serving
- Salsa
Preparation

For the chicken: Season chicken breasts with salt and pepper. Heat 1 tablespoon butter in a pan and cook chicken for about 7 minutes. Remove, dice and keep warm.
Drain corn. Peel and dice carrots, summer squash, onion and garlic.

Heat remaining butter in pan and sauté vegetables. Deglaze with vinegar and stir in cooked chicken.
Heat tortillas in the oven or microwave and spread on cream cheese. Add chicken mixture, turn in the ends and roll. Slice in half on the diagonal and serve with salsa.
