- 500 grams green Asparagus
- 5 Tbsps olive oil
- salt
- freshly ground peppers
- 100 milliliters Chicken broth
- 2 Tbsps lemon juice
- 4 Chicken breasts (each about 120 grams)
- 2 Avocados
- 40 grams chopped Walnut
Preparation steps

Peel the bottom third of the asparagus. Cook in 2 tablespoons of hot oil. Season with salt and pepper and deglaze with the broth. Cover and cook for about 5 minutes. Remove from heat, sprinkle with lemon juice and 2 tablespoons of oil. Cool to lukewarm.

Rinse the chicken breasts, pat dry and cut into strips. Cook in remaining oil for 2 to 3 minutes until golden brown. Season with salt and pepper.

Peel the avocados, cut in half, remove pits and thinly slice. Arrange on plates with the chicken strips, asparagus and walnuts. Sprinkle with pepper and serve.
