Chicken Broth with Lemongrass and Shiitake Mushrooms

1 onion
1 sprig Lemongrass alternatively, 1 piece lemon zest)
1 Tbsp butter
1 l Chicken broth (Homemade or instant)
2 carrots
½ stalk Leeks
100 grams shiitake mushrooms
salt
freshly ground peppers
½ tsp ground ginger
2 Tbsps sherry
Chives or cilantro (for sprinkling)
4 sprigs Lemongrass (for garnish)

Preparation

Peel and coarsely chop onion. Remove outer leaves of lemongrass, then cut it into 4 cm (approximately 1.5 inch) pieces. Crush pieces by rolling over them with a rolling pin a few times. In a pot, sauté onion in butter, 2-3 minutes. Add broth and lemongrass, bring to a boil and simmer about 15 minutes.

Rinse carrots and leek and wipe mushrooms clean with a paper towel. Peel carrot and cut into thin strips. Trim leek and cut crosswise into rings. Slice mushrooms as required. Strain broth through a sieve into a new pot. Reheat and season with salt, pepper, ginger, and sherry. Add carrots, leek, and mushrooms and simmer 3-5 minutes. Sprinkle with herbs and lemongrass and serve immediately.
