Preparation steps

1.

Rinse and slice the zucchini and eggplants.

Rinse the chicken fillet under cold water. Pat dry, and cut into bite-size pieces.

Season with salt and pepper. Alternately skewer the zucchini, chicken, and eggplant on wooden skewers. Brush with oil and cool for about 10 minutes on the hot grill, rotating often.

4.

Meanwhile, rinse the cilantro, shake dry and pluck the leaves.

Serve the skewers on a plate and garnish with coriander.
