Chicken and Pea Curry with Bananas
- For the curry
- 1 chicken (about 1 kg)
- 2 onions
- 4 scallions
- 2 garlic
- 2 tablespoons vegetable oil
- 1 tablespoon Turmeric
- 1 teaspoon chopped Coriander
- 1 teaspoon freshly grated ginger
- ½ ground Cumin
- 250 milliliters Chicken broth
- 200 milliliters Coconut milk
- 200 grams Peas
For the curry: Remove the skin from the chicken and dice meat. Peel the onions, scallions and garlic. Cut the onions into strips and finely chop scallions and garlic. Sauté with the chicken in hot oil for 2-3 minutes.
Add the turmeric, cilantro, ginger and cumin and deglaze with the broth. Add the coconut milk and simmer gently, stirring occasionally, about 30 minutes. If necessary, add some more broth.
Add the peas and cook for about 5 more minutes. Season with salt and cayenne pepper and serve with the toppings.
