- 1 handful Baby spinach
- 1 Pear
- 1 Tbsp lemon juice
- 2 Tbsps Walnut oil
- 8 slices white bread
- 200 grams Taleggio cheese (or Brie)
- salt
- freshly ground peppers
- Red pepper flakes
- 2 Tbsps lingonberry
Preparation steps

Preheat the oven broiler to 240°C (approximately 475°F).

Rinse the spinach, pick over and shake dry. Rinse the pears, peel, quarter and cut out cores. Cut into quarters, then cut the quarters into thin slices. Mix with lemon juice and walnut oil.

Grill the bread on a rack under the oven broiler until crispy on both sides, watching carefully.

Meanwhile, cut rind off the cheese and cut into small cubes. Spread on the bread and broil until the cheese has melted, another 2-3 minutes, watching carefully.
5.
Season bread with salt and pepper and sprinkle with red pepper flakes. Arrange the pear slices on top of each bread slice, add a few leaves of spinach and serve garnished with lingonberries.
