Cheese Rösti with Ham and Salad
Peel the potatoes and grate. Wrap in a damp tea towel and squeeze out the liquid. Mix the grated potatoes with the egg yolks, cheese, potato starch and caraway and season with salt and nutmeg.
Melt the butter in a large frying pan, add the potato mixture, flatten slighlty and cook over medium heat until golden brown, about 5 minutes. Carefully flip over and cook for another 5 minutes. Drain on paper towels and keep warm in a preheated oven at 80°C (approximately 175°F).
Rinse the lettuce and spin dry. Arrange the rösti on a serving platter, top with the lettuce and ham and season with salt and pepper.
Serve with sour cream, if desired.
