Cheese Hedgehog with Carrot Sticks

- 2 Pumpernickel rounds (each about 10 grams)
- ½ tsp Tomato paste
- 1 pc Cucumber (about 80 grams)
- 1 mini round Cheese (about 20 grams)
- ½ small carrot (about 50 grams)
- 4 Pumpkin seed
Spread pumpernickel rounds with the tomato paste.
Peel the cucumber, cut into 2 thick slices and place one on top of each pumpernickel round.
Halve the mini cheese disk horizontally and put the "hedgehog body" on the bread rounds.
Peel carrot. Cut off the rounded sides and cut the rest into thin slices, then into thin sticks, about 2 cm (approximately 3/4 inch) long.
Arrange carrot "spikes" in the cheese, leaving a small corner free.
Press 2 pumpkin seeds as "eyes" deep into corner of each hedgehog and serve.

Give the cheese urchin an Italian touch: instead of the cucumber slices, the pumpernickel is topped with tomato slices and the small cheese loaf is simply replaced with mozzarella.
