Cheese and Tomato Skewers

- 1 clove garlic cloves (sliced)
- 0.333 cup olive oil
- 1 tsp Sea salt
- 4 Tbsps lemon juice
- 2 cups mini (bocconcini) Mozzarella (drained)
- 2 ⅔ cups cherry tomatoes (pierced with a fork)
- 1 handful Basil

Mix the garlic with the oil, salt and lemon juice. Add the mozzarella and tomatoes. Cover and leave to marinate in the fridge for approx. 30 minutes.
Thread the tomatoes, mozzarella and basil leaves alternately on wooden skewers and serve.
