Preparation steps

1.

Peel the cucumber and cut into 4 portions of about 5 cm length (approximately 2 inches). Place upright on a work surface and scoop out a well with a melon baller.

2.

Rinse the mint, shake dry and set aside 4 mint tips as decoration. Chop the remaining leaves.

Crush the fresh goat's cheese with a fork, mix with the chopped mint and spoon into the hollowed out cucumber pieces.

3.

Cut the cress with scissors and arrange on small plates. Place the stuffed cucumbers on top and serve garnished with mint tips.
