300 grams Puff pastry dough (frozen)
Pastry flour (for work surface)
butter (for molds)
1 egg yolk
1 shallot
1 ripe Mango
1 ripe Avocado
½ lemon
salt
freshly ground peppers

Preparation steps

Preheat oven to 200°C (approximately 400°F.)

Defrost shortcrust pastry and roll out thinly on a floured surface. Cut shortcrust pastry into small circles 7 cm (approximately 2 3/4 inches) in diameter and use to line buttered muffin cups. Leave 1 cm (approximately 1/3 inch) high edge. Brush dough with egg yolk and bake in preheated oven for 15-20 minutes until golden brown.

Meanwhile peel shallot and finely chop. Peel mango, remove pulp from core and dice finely. Halve and pit avocado, remove flesh from shell and dice. Mix avocado with mango, shallot and lemon juice and season with salt, pepper and a pinch of sugar.

Remove shortcrust pastry circles from oven, let cool, disengage from ramekins and leave to cool. Spread mango and avocado salsa on top of pastry circles and serve topped with caviar.
