- 1 kilogram carrots
- 3 Tbsps apple cider vinegar
- 1 Tbsp lemon juice
- 1 Tbsp honey
- 4 Tbsps grapeseed oil
- salt
- 2 Tbsps Sesame seeds
- mint (for garnish)
Preparation

Peel the carrot, leaving some of the green stem intact. Cook in boiling salted water for 5 minutes, until al dente. Rinse and drain.

Toast the sesame seeds in a dry pan. Cool slightly and mix with the vinegar, grapeseed oil, lemon juice, and honey. Season to taste with salt, and drizzle over the carrots. Garnish with the mint and serve.
