- 4 medium-sized carrots
- 2 Apple
- 1 white Daikon radish
- 50 grams slivered almonds
- white Grape
- 1 pc ginger (3 cm)
- salt
- freshly ground peppers
- 2 lemons
- 3 Tbsps Almond oil
- ½ tsp sugar
- 4 Tbsps cold water
- 2 sprigs fresh cilantro
Preparation steps

Peel and slice carrots. Rinse, quarter and core apples. Cut apples into slices and sprinkle with lemon juice. Peel and grate radish and sprinkle with a little salt. Peel and finely grate ginger (removing any fibers that are left on the grater). Make a vinaigrette: Whisk together almond oil, the juice of one lemon, water, ginger and sugar. Season with salt and pepper.

Toast almonds lightly in a dry frying pan. Rinse and halve a few white grapes. Divide carrots, apple slices and grated radish among 4 small plates. Drizzle with vinaigrette, sprinkle with almonds and garnish with grapes and cilantro leaves.
