Coarsely grind 150 grams (or approximately 5 ounces) of the walnuts and chop the rest. Rinse and finely grate the carrots. Combine the honey, eggs and butter in a bowl, then add the ground walnuts, baking soda, cinnamon, vanilla and salt. Mix well.

Add the carrots, raisins and chopped walnuts. Pour the batter into the greased pan and bake in a preheated oven at 180°C (approximately 350°F) for about 50 minutes. Remove the cake from the mold, garnish with chopped walnuts and serve.
