- 2 Tbsps ground Espresso
- 4 Tbsps very hot milk
- ½ cup butter
- ½ cup dark brown sugar
- 1 egg (beaten)
- 2 cups all-purpose flour
- 1 tsp Baking powder

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Put the coffee into a small bowl and pour over the hot milk. Leave to stand for 5 minutes.
3.
Beat the butter and sugar in a mixing bowl until light and fluffy, then beat in the egg until smooth.
4.
Sift in the flour and baking powder and gently stir into the mixture.
5.
Strain in the coffee through a sieve and mix until blended.
6.
Place spoonfuls of the mixture, well apart on the baking trays. Bake for about 15 minutes until browned. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
