- 3 Tbsps Rice wine vinegar
- 1 tsp Dijon mustard
- 2 Tbsps hot water
- 3 Tbsps Avocado oil
- For the salad
- 1 small Red cabbage (shredded)
- 6 cups curly Kale (chopped)
- 2 carrots (shredded)
- 1 ½ cups Fava bean (shelled)
- 1 red pepper (diced)
- 1 yellow pepper (diced)
- 1 bunch cilantro (leaves picked)
- ½ cup Cashews
- salt
- freshly ground peppers

Preparation steps

For the dressing: Whisk together the vinegar, mustard, hot water, and seasoning in a mixing bowl. Add the avocado oil in a slow, steady stream, whisking until the dressing has emulsified.

Mix together the cabbage, kale, carrots, fava beans, and peppers in a large mixing bowl. Add the dressing, toss well, and lift the salad into bowls.

Top with cilantro leaves and cashews before serving.
