1 lemon (juiced)
1 tsp dried oregano
1 small Cucumber
9 ozs cherry Tomatoes (halved)
6 ozs button Mushrooms (halved)
2 Avocados (stones removed and flesh chopped)
4 slices rustic white bread (toasted and cut into cubes)
Basil (leaves only)

Preparation steps

1.
Mix together the oil, lemon juice and oregano to make a dressing. Season with salt and freshly ground black pepper and set aside.
2.
Cut the cucumber in half lengthways, scoop out the seeds and slice the flesh.
3.
Place the cucumber with the tomatoes, mushrooms, avocado, bread and basil leaves in a large bowl. Pour over the dressing, mix gently and serve immediately.
