2 ¾ cups all-purpose flour (plus extra for dusting)
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter
¼ cup Maple syrup
cup maple sugar (or light brown sugar)
1 large egg

Preparation steps

1.
Sift the flour, bicarbonate of soda, and salt into a bowl and set aside.
2.
Whisk together the butter, maple syrup and sugar until light and fluffy. Whisk in the egg.
3.
Gradually add the flour mixture, beating well between each addition.
4.
Divide the dough in half and flatten into two discs. Wrap in cling film and chill for about 1 hour until firm.
5.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
6.
Roll out one disc on a lightly floured surface about 5mm| 1/4" thick.
7.
Cut out rounds with 3.5cm|1 1/2" round cookie cutter. Repeat with the remaining disc.
8.
Place on the baking trays, about 2.5cm|1" apart. Press a smaller cookie cutter partway into the dough to create the button's rim. Use a straw or skewer to make 4 holes in the centre of each cookie.
9.
Bake for 10-12 minutes until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
10.
Thread the candy laces through the buttonholes.
