Buttermilk Rolls

- 7 ozs Pastry flour
- 7 ozs Whole wheat flour
- 1 Tbsp Wheat germ
- 1 packet Dry yeast
- 1 pinch salt
- 8 ½ ozs Buttermilk
- 3 Tbsps honey
- Oranges
- 18 ozs Lowfat cream cheese
- 3 Tbsps Walnut
Combine the flours, wheat germ, yeast and a pinch of salt in a bowl. Make a well in the center and pour in the buttermilk and 1 tbsp honey. Mix with the dough hook of a mixer to form a smooth dough and then let rise for 1 hour in a warm place.
Meanwhile, rinse the orange in hot water, pat dry, peel, zest and juice. Mix the cream cheese, remaining honey, and 3 tablespoons orange juice.
Chop the nuts coarsely and toast in a dry pan until fragrant. Cool slightly. Stir the orange zest and nuts into the cream cheese and transfer to a small bowl.
Divide the dough into 8 equal portions, shape into round rolls and make a shallow slash across the top of each with a sharp knife. Place on a baking sheet lined with parchment paper and brush with cold water. Bake in a preheated oven at 400°F for 20-25 minutes. Remove, cool, and serve with the sweet cream cheese spread.

Even smarter
Use a low-calorie yogurt spread in place of the cream cheese if desired. Any healthy nut can replace the walnuts, such as pumpkin seeds or cashews.
