Burgers with Crawfish Salad

- 1 scallion
- 250 grams crayfish
- 2 Tbsps Mayonnaise
- 2 Tbsps sour Whipped cream
- 2 Tbsps finely chopped Fresh herbs (such as dill and parsley)
- lemon juice
- salt
- freshly ground peppers
- Tabasco sauce
- 500 grams Ground beef
- olive oil (for the grill)
- 4 Hamburger bun
- 4 Tbsps Spice ketchup
- Dill flower (for garnish)
Preparation

Trim, rinse and chop the scallion. Rinse the crawfish and pat dry. Mix with mayonnaise and sour cream then mix in the herbs. Season with lemon juice, salt, pepper and Tabasco.

Knead the ground beef well with salt and pepper and form into 4 patties. Oil the grill and cook burgers over high heat for about 4 minutes per side.

Cut the burger buns in half and briefly lay on the grill. Spread the bottoms with the ketchup and top with a burger. Divide the crawfish salad on top and serve with the bun top and dill garnish.
