- 800 grams Broccoli
- salt
- 2 ½ Tbsps butter
- 2 Tbsps Pastry flour
- 200 milliliters Whipped cream (at least 30% fat content)
- 200 grams Processed cheese
- freshly ground peppers
- Nutmeg
- 250 grams freshly grated Parmesan
Preparation

Preheat the oven to 200°C (approximately 390°F).

Rinse the broccoli and blanch in boiling salted water for 5 minutes. Drain, reserving the cooking liquid. Rinse the broccoli with cold water and drain.

Melt butter in a pan, sprinkle with flour and cook until lightly browned. Gradually whisk in 600 ml (approximately 2 1/2 cup) of the broccoli cooking liquid and the cream. Add the cheese spread and bring to a boil. Reduce heat slightly and season with salt, pepper and nutmeg and simmer 5 minutes, stirring often.

Place broccoli mixture into 4 ramekins or a small casserole dish, pour the sauce over and sprinkle with the Parmesan. Bake until piping hot and golden brown, about 15 minutes. Remove and serve immediately.
