2 scallions

800 milliliters Chicken broth (or vegetable broth)
200 milliliters Whipped cream
1 Tbsp Horseradish (from a jar)
salt

Preparation steps

Cut bread into slices, then cut into small cubes. Set aside about 1/4 of them to make croutons. Rinse and trim scallions. Thinly slice scallion greens on the diagonal and set aside for garnish. Coarsely chop white and light green parts of scallions. Peel and finely chop garlic. In a pot, sauté garlic, chopped scallions, and bread cubes in 1 tablespoon melted butter, 2-3 minutes. Deglaze with broth and cream. Simmer about 10 minutes.

Meanwhile, make croutons: In a hot pan, fry remaining bread cubes in 1 tablespoon melted butter until golden-brown and crunchy.

Add remaining butter to the soup and purée until creamy (strain through a sieve if desired). Add additional broth or simmer a few more minutes until soup reaches desired consistency. Season with horseradish, salt, lemon juice, and pepper.

Ladle soup into bowls and garnish with croutons and scallion greens.
