150 grams Buckwheat flour
50 grams all-purpose flour
1 pinch salt
10 grams Yeast
250 milliliters lukewarm milk
2 tablespoons melted butter
3 eggs
clarified butter (to saute)
200 grams Sour cream
Salmon caviar

Preparation steps

1.

Separate the eggs. In a bowl, mix together the flour and buckwheat flour. Dissolve the yeast in the lukewarm milk and stir together with the melted butter, egg yolk and salt and whisk into the flour. Cover and let stand in a warm place.

Beat the egg whites until stiff and fold into the flour mixture.

Heat some butter in a pan and working in batches, drop the batter by tablespoonfuls into the pan, lightly flatten with a spatula and saute until golden brown on both sides, keep warm.

4.

Top with sour cream and garnish with salmon caviar and chives.
