Beet latte can be easily modified vegan: Replace the cow's milk with a plant-based alternative (for example, oat drink, almond drink or soy drink) and replace the honey with maple syrup or agave syrup.

- 7 ozs Beet juice
- ½ organic lemon
- 10 ozs milk (whole)
- 1 tsp Vanilla
- 1 pinch salt
- 1 Tbsp honey

Preparation steps
Heat beet juice in a small saucepan over medium heat. Rinse lemon half hot, pat dry and finely grate zest (use remaining fruit elsewhere).
In another saucepan, heat milk with lemon zest, vanilla, and 1 pinch of salt over medium heat and froth with a milk frother.
Sweeten beet juice with honey, divide among cups or mugs and fill with the milk foam. Stir a little if desired to get a nice pattern. Enjoy beet latte warm.
