- For the casserole
- 3 fresh Beets
- 5 ripe Apple
- 3 eggs
- 350 milliliters Whipped cream
- 75 grams grated Parmesan
- 150 grams Crème fraiche
- salt
- freshly ground peppers
- Nutmeg
- 100 grams whole peeled Walnut
- Fat (for the baking dish)
- For garnish
- 1 parsley
Preparation steps

For the casserole, preheat the oven to 200°C (approximately 400°F). Rinse the beets, peel (disposable gloves are recommended, because the red color stains) and cut into thin slices. Peel apples, remove the seeds with a corer and cut into thin slices.

Mix the eggs with the cream, cheese and crème fraîche and season with salt, pepper and nutmeg. Fold in walnuts.

Layer apple and beet slices in a greased baking dish and pour in the egg-cream mixture so that about 3/4 of the apples and beets are covered. Bake until golden brown in preheated oven for 35-40 minutes. Serve garnished with parsley.
