4 slices Beef (about 200 grams or 7 ounces)

2 Tomatoes
1 onion
2 Tbsps clarified butter
200 liters Beef broth
2 heads Endive
50 grams butter
200 milliliters Whipped cream

Preparation steps

Rinse beef, pat dry and season with salt and pepper. Blanche tomatoes, shock in ice water, peel, remove seeds and cut into cubes. Peel and mince onion. Heat clarified butter in a large saucepan and brown beef on both sides.

Add onions and fry until soft. Add tomatoes and deglaze with broth. Cover and cook over medium heat for 1 1/2 hours.

Rinse endive, remove outer leaves and blanch in boiling salted water for 5 minutes.

Remove endive, shock in ice water, drain and cut into strips. Melt butter in a pan, add endive and season with salt and pepper. Pour in cream and simmer for 2 minutes.

Plate beef, drizzle with pan sauce and serve with endive.
