5 scallions
200 grams fresh Mung bean sprouts
1 red chili pepper
600 grams Beef fillet
1 pc fresh ginger (about 1.5 cm)
2 Tbsps sesame oil
2 Tbsps coarsely chopped parsley
soy sauce (to taste)
freshly ground peppers

Preparation steps

Rinse the bell peppers, cut in half, remove seeds and white membrane and cut flesh into thin strips. Peel the carrots and cut into thin sticks. Rinse, trim and slice the scallions diagonally. Rinse the mung bean sprouts in a colander and drain well. Rinse the chile pepper, cut in half, remove seeds and finely chop.

Rinse the beef, pat dry and cut into strips. Peel the ginger and finely grate. Heat oil in a wok and brown the beef strips on all sides. Remove from the wok and set aside.

Add the vegetables, ginger, parsley and chile pepper to the wok and stir-fry until browned, stirring constantly. Return the beef to the wok and stir to combine. Serve seasoned with soy sauce and pepper to taste.
