- 8 scallions
- ½ red chili pepper
- 20 grams ginger
- 4 Tbsps soy sauce
- 4 Tbsps vegetable stock
- ½ tsp cornstarch
- Sesame seeds (to sprinkle)
- 2 Tbsps sesame oil

Preparation steps

Cut the beef into 8 slices, Cut slices to 2 mm thickness. Rinse the chile, halve, remove the seeds and chop very finely. Peel the ginger and grate finely. Rinse the scallions, trim, remove the green except for a small piece (otherwise use). Cut the spring onions lengthwise and fry in sesame oil. Remove and allow to cool slightly, Then wrap in each a halved slice of beef fillet and secure with a skewer.

Cook the chile and ginger in a pan with the sesame oil, move to the edge, add beef and sear quickly around the sides, remove and keep warm. Mix in soy sauce and vegetable broth and deglaze the pan. Thicken with cornstarch and a little cold water. Pour this sauce with a teaspoon onto the skewers and serve sprinkled with sesame seeds.
