6 cloves garlic cloves (peeled)
6 cups Basil (leaves picked)
1 Tbsp Pine nuts
1 ⅔ cups olive oil
5 cups Tagliatelle
2 tomatoes (diced)
2 Tbsps Parmesan (grated)

Preparation steps

1.
Set aside a few basil leaves for decoration.

Crush the garlic, basil and pine nuts with a pestle and mortar, adding the olive oil gradually. Season, cover with cling film and chill.
3.
Bring a large pan of salted water to the boil. Add the pasta and cook according to the packet instructions. Strain the pasta and transfer to a frying pan.
4.
Add the pistou and the tomato cubes. Stir for 2 minutes on a gentle heat then transfer to a serving dish. Sprinkle with Parmesan, decorate with the reserved basil leaves and serve immediately.
