Baked Spinach

- 1 kilogram fresh Spinach
- salt
- 1 garlic clove
- 1 Tbsp butter
- freshly ground peppers
- Nutmeg
- 1 Tbsp lemon juice
- butter (for the pan)
- 75 grams grated Cheese (such as Gruyère)
- 4 Tbsps breadcrumbs
Preheat the oven to 220°C (approximately 425°F). Rinse the spinach and blanch in boiling salt water. Rinse in cold water, drain, squeeze and coarsely chop.
Saute the pressed garlic in butter. Add the spinach and season with salt, pepper, nutmeg and lemon juice. Pour the mixture into the buttered ramekins.
Sprinkle the ramekins with cheese and breadcrumbs. Bake in the oven for about 5 minutes. Remove and serve immediately.
