Preparation steps

Grate the cheese. Blanch apricots in hot water, rinse in cold water and peel. Halve the fruit, remove the pits and cut the flesh into small pieces. Mix with cheese, breadcrumbs and parsley and season with pepper and nutmeg. Preheat the oven to 200°C (approximately 400°F). Rinse the chops and pat dry.

Score the fat around the edges of chops. Season the chops with salt and pepper and fry in hot oil vigorously quickly on both sides. Place on a plate or the oven rack. Spread the apricot mixture on top and bake until golden brown, about 10 minutes.
