Ingredients
Baked Cod with Mozzarella and Zucchini
Drain mozzarella and cut into thin slices. Rinse and dry zucchini, cut into 0.5 cm (approximately 1/5 inch) thick slices, season with salt and let stand. Pat dry with paper towels.
Heat olive oil in a pan, then saute zucchini slices on both sides until golden brown. Season with pepper and drain on paper towels. Rinse and pat dry cod fillets, season with salt and pepper and drizzle with lemon juice in a baking dish. Let stand for about 5 minutes, then top fish with mozzarella and zucchini slices, overlapping them slightly.
Peel onions and cut into rings. Arrange on top of fish and add tomato juice to the dish. Season with salt and pepper. Bake in preheated oven at 180°C (approximately 350°F) for about 10 minutes. Garnish with dill and serve.
