- 1 Roasted Chicken (about 1400 grams)
- 1 lemon (zested and juiced)
- 1 lemon
- salt
- freshly ground peppers
- 200 grams onions
- 2 Tbsps olive oil
- 2 Tbsps butter
- 3 Apple
- 1 Tbsp Maple syrup
- ¼ tsp ground ginger
Preparation

Cut the chicken into 8 pieces, rinse and pat dry. Rub with lemon zest, sprinkle with lemon juice and season with salt and pepper. Place on a greased baking sheet. Peel lemon and cut flesh into sections. Peel onions and cut into eighths or quarters. Add lemon sections and onion to chicken. Mix oil and butter and add to sheet.

Bake at 200°C (approximately 400°F) for 35 minutes.

Peel apple and scoop flesh into balls with a small melon baller. Combine apple, ginger powder and maple syrup. After chicken has cooked for 25 minutes, add apple mixture to sheet and finish baking. Serve immediately.
