- 4 ripe Apple (such as Boskop)
- 2 Tbsps lemon juice
- 1 bunch Arugula
- 2 Red onions
- 4 Tbsps olive oil
- 2 Tbsps lemon juice

- 2 Tbsps shelled Sunflower seed
Preparation
1.
Preheat oven to 180°C (approximately 350°F).

Rinse, halve and immediately sprinkle cut surfaces of apples with lemon juice. Line a baking sheet with parchment paper. Place apple halves on sheet and bake 20-30 minutes.

Meanwhile, rinse, trim and spin arugula dry. Peel, halve and thinly slice onions.

Whisk oil with lemon juice and season with salt and pepper. Toast sunflower seeds in a dry frying pan. Remove from pan and let cool. Arrange apple halves on a serving plate. Mix together arugula with sliced onion and distribute over apple halves. Drizzle with vinaigrette. Serve sprinkled with sunflower seeds.
