Bacon and Gorgonzola Salad
- 1.333 cups Pancetta (diced)
- 5 Tbsps olive oil
- 2 Tbsps white wine vinegar
- 5 cups mixed Lettuce (torn into bite-sized pieces)
- 1.333 cups Gorgonzola (rind cut of, cut into bite-sized pieces)

Fry the Pancetta in 1 tbsp oil until golden brown.
Mix the remaining oil with the vinegar and season with salt and ground black pepper.
Arrange the lettuce on plates, drizzle with the vinaigrette and sprinkle with the cheese and the Pancetta.
