Avocado and Lime Soup with Cilantro

- 1 onion
- butter (for sautéing)
- 3 ripe Avocados
- 1 fresh Lime
- ¾ l Vegetable broth
- salt
- freshly ground peppers
- cayenne pepper (to taste)
- chili peppers
- 2 cilantro
Preparation
1.
Peel onion and chop finely. Melt butter in a pot.

Halve and pit avocados, peel and dice the pulp. Saute onion in a pan, add avocado and let cook through.

Grate finely lime zest and squeeze out lime juice. Add lime juice to avocado and add about 2/3 of vegetable broth. Simmer for about 5-10 minutes.

When avocados are soft, puree soup. Add more broth if too thick.

Chop cilantro and add to soup (set aside some leaves for garnishing). Season soup with spices and pour into four small bowls. Garnish soup with chile pepper, lime zest and cilantro. Serve.
