- 1 Fennel bulb
- 4 Tbsps peeled Walnut
- 3 ripe Pear
- 3 Tbsps lemon juice
- 1 tsp liquid honey
- 1 Tbsp Orange juice
- 4 Tbsps olive oil
- salt
- freshly ground peppers

Preparation steps
1.
Rinse the endive lettuce, trim, shake dry and pluck small leaves. Trim the fennel bulb, rinse, trim the hard stalk, and cut into thin strips.

Toast the walnuts in a dry pan until fragrant. Remove, allow to cool and chop coarsely.
Rinse the pears, cut into quarters, cut out the core and cut into thin slices. Mix with 1 tablespoon lemon juice.

For the vinaigrette, stir together the lemon juice with the honey, orange juice and olive oil, and season with salt and pepper.
Place the lettuce, fennel bulb, walnuts and pears in a bowl, and drizzle the vinaigrette over. Toss well and serve.
